PROTEIN BOWL
This colorful recipe came about by chance during my lunch break and is already one of my favorites. Very spicy, creamy and with a bite - so there's something for everyone. The chickpeas and sweet potato ensure a high protein content.
INGREDIENTS (2 portions)
1 medium sweet potato, cut into cubes
1/2 tin of chickpeas, drained
juice 1/2 small lemon
1 tsp curry powder
Salt, pepper
2 tbsp coconut/soy yogurt
1 small clove of garlic, pressed
flat-leaf parsley, chili or other herbs as garnish
Optional: Brown rice and/or avocado as a topping
PREPARATION
Bring the water to the boil and cook the sweet potatoes in it for approx. 5 mins.
When the sweet potatoes are soft, mix with the chickpeas & lemon juice and season with curry, salt & pepper.
Season the plant-based yogurt with salt, pepper and lemon (and fresh garlic if you like).
Sprinkle with chili, herbs and fresh pepper + toppings before serving.
