QUICK ZUCCHINI SOUP
Takes no longer than 10 minutes - but will stay in your memory longer, I promise. A recipe for when time is of the essence. With lots of vegetables, super greens & an exotic topping.
INGREDIENTS (3-4 portions)
700g zucchini
2 small potatoes
1 onion
600ml water with vegetable stock
1 handful of baby spinach or celery greens
3 tablespoons olive oil
Juice 1/2 lime
Salt, pepper
Garlic (powder)
Coconut flakes
PREPARATION
Bring the pan of water to the boil, add the vegetable stock and cook the roughly chopped vegetables in it for approx. 7 mins.
Place the vegetables and water in a blender (or use a hand blender) and blend briefly with the baby spinach/greens and olive oil.
Season to taste with lime juice, salt, pepper and garlic.
Sprinkle with coconut flakes & pepper before serving.
