QUICK ZUCCHINI SOUP

 

Takes no longer than 10 minutes - but will stay in your memory longer, I promise. A recipe for when time is of the essence. With lots of vegetables, super greens & an exotic topping.

INGREDIENTS (3-4 portions)

  • 700g zucchini

  • 2 small potatoes

  • 1 onion

  • 600ml water with vegetable stock

  • 1 handful of baby spinach or celery greens

  • 3 tablespoons olive oil

  • Juice 1/2 lime

  • Salt, pepper

  • Garlic (powder)

  • Coconut flakes

PREPARATION

  • Bring the pan of water to the boil, add the vegetable stock and cook the roughly chopped vegetables in it for approx. 7 mins.

  • Place the vegetables and water in a blender (or use a hand blender) and blend briefly with the baby spinach/greens and olive oil.

  • Season to taste with lime juice, salt, pepper and garlic.

  • Sprinkle with coconut flakes & pepper before serving.
