fruity and savory SommER SALSA
Fruity and hearty. Perfect for the summer. With nachos or potatoes. A poem and prepared in no time at all.
INGREDIENTS (2 portions)
For the salsa
1 small red bell pepper (or pointed bell pepper)
1 red onion
1/2 cucumber, peeled
1/2 avocado
1 handful of mango (can also be frozen)
4 tbsp corn or kidney beans
2-3 tbsp olive oil
Juice 1 lemon
Optional for the spicy version: a few jalapenos
Sea salt
Fresh pepper
As a topping
Fresh herbs such as basil, flat-leaf parsley and/or cress
PREPARATION
Finely chop all the ingredients or put them in a food processor. Add the corn/kidney beans.
Mix with lemon juice, olive oil and spices.
Serve with potatoes (e.g. from the oven/airfryer) or nachos.
Off to the fridge.
