Healthy pancakes

 

Whether for breakfast or as a sweet brunch - these heavenly pancakes are perfect for the start of the weekend and can be refined with delicious toppings as desired.

INGREDIENTS (4-6 PORTIONS)

For the dough

- 230ml oat milk

- 30g chia seeds

- 135g oat flakes

- 1 mashed ripe banana

- 1 tbsp applesauce

- 1-2 tsp cinnamon

- optional: 1 tbsp agave syrup or date syrup

- Toppings: almond butter, maple syrup, berries and banana as desired

 

For browning

- Olive oil or coconut oil

- 1-2 apples

PREPARATION

  • Mix the oat milk with the chia seeds and leave to swell for approx. 5 mins.

  • Add the remaining ingredients and mix until a creamy batter is formed.

  • Then fry in coconut or olive oil on each side in a non-stick pan until golden brown.

  • Garnish with toppings as desired and enjoy warm.
